Pumpkin has dense orange flesh that turns soft, sweet and creamy when it is cooked. It is a comforting vegetable that works in savoury and sweet dishes alike, and the skin of many small varieties is thin enough to eat once cooked.
Ways to use it
- Cut into chunks and simmer in a coconut milk curry with pork or shrimp.
- Stir fry with egg, garlic and a little fish sauce.
- Steam or roast until tender, then mash for a smooth soup.
- Steam slices and serve with a sweet coconut cream.
- Bake in a hot oven with a little oil and salt as a side dish.
Storing it
Pumpkin is among the vegetables that do not tolerate temperatures below 10 degrees Celsius, so a whole one is better kept out of a cold fridge. Keep it in a cool spot away from direct sun and use it within a few days. Wash the skin under running water before cutting. Scars or small marks on the skin are common and do not affect the flesh inside.
