A cucumber is mostly water, which is what makes it so refreshing next to spicy food. Its skin is thin and its flesh is crisp and mild, so it goes with almost everything on the table.
Ways to use it
- Slice and serve beside chilli dips, grilled meat and fried rice.
- Cut into half moons for a quick salad with shallot, lime and a little sugar.
- Add to rice paper rolls and sandwiches for crunch.
- Smash and dress with garlic, soy sauce and a little vinegar.
- Slice thinly into a cold noodle bowl.
Storing it
Cucumbers do not like temperatures below 10 degrees Celsius, and a home fridge is colder than that, so they keep better away from apples and tomatoes. A cool, ventilated spot suits them better than the cold drawer, and they are best within a few days. Wash under running water just before eating, using a clean brush on the skin if you like, and cut away any damaged parts.
