A carton of eggs is one of the most useful things in many kitchens. Boiled, fried, scrambled or stirred into rice, an egg turns a few simple ingredients into a meal in minutes. These are eggs for people who cook every day and want to know where their food came from.

Ways to use it

  • Soft or hard boil them for rice, noodle soup or a salad.
  • Fry an egg with crisp edges and a runny yolk over basil and rice.
  • Whisk with a little water and steam into a smooth savoury custard.
  • Beat into an omelette with spring onion, tomato or leftover vegetables.
  • Bake them into cakes and breads, where room temperature eggs mix in most easily.

Storing it

In Thailand the guidance is to keep eggs at normal room temperature for up to about a week, then move them into the fridge. Keep them in the carton, on an inside shelf rather than the door, and do not freeze them. Shell colour and yolk colour tell you about the breed and the feed, so judge freshness by cracking one onto a plate and by smell, as the guides explain.
