A ripe papaya has orange flesh that is soft, smooth and mildly sweet, with a gentle musky smell. It is a fruit that rewards a little patience, because it tastes best when it has had time to soften on the counter.
Ways to use it
- Halve, remove the black seeds and scoop with a spoon.
- Squeeze a little lime over the flesh to brighten the flavour.
- Cube and serve with yogurt or sticky rice.
- Blend into a smoothie with banana and ice.
- Add to a fruit salad with mango and dragon fruit.
Storing it
Papaya keeps ripening after harvest, so leave a firm fruit on the counter at room temperature until the skin turns yellow-orange and gives slightly. Cold below about 12 degrees Celsius can cause delayed or uneven ripening, blotchy skin and off flavours. Once ripe, the fridge can extend its life. Wash the skin under running water before cutting.
