Sesame seeds come in two common colours. White sesame is mild, sweet and nutty. Black sesame looks striking and tastes a little deeper and more roasted. Both are small, flat seeds that become far more fragrant once they are toasted, which makes them one of the most useful toppings in a kitchen.

Ways to use it

  • Toast in a dry pan over low heat for a few minutes, shaking often, until they smell nutty and the white seeds turn pale gold.
  • Sprinkle over steamed rice, noodles, stir-fried greens or a cucumber salad.
  • Press onto fish, tofu or chicken before pan frying for a crisp coating.
  • Grind toasted seeds with a pinch of salt and sugar into a simple seasoning for rice.
  • Use black sesame in sweet things such as rice dumplings, puddings and sweet soups, and white sesame in breads and biscuits.

Watch the pan closely. Sesame goes from toasted to bitter quickly, so take it off the heat as soon as it smells good and tip it onto a plate to cool.

Storing it

Keep the pack sealed in a cool, dry cupboard, away from sunlight and heat. After opening, store the seeds in a jar with a tight lid. Toasted seeds are best used within a short time, so toast only what you need.
