Macadamias are round, cream-coloured nuts about the size of a marble. The shell is so hard that they are nearly always sold already cracked. The texture is the reason people love them: a crunch that gives way to something soft and almost buttery, with a gentle sweet taste. Lightly toasted, the flavour gets rounder and the colour goes pale gold.

Ways to use it

  • Eat them as they are, or toast them in a dry pan or a low oven for a few minutes until just golden.
  • Chop and fold them into cookies, brownies or banana bread.
  • Scatter toasted pieces over a salad, a bowl of yoghurt or morning oats.
  • Blend soaked nuts with water until smooth for a creamy base for dressings and desserts.
  • Stir-fry them with chicken and vegetables at the very end, so they stay crunchy.

They brown quickly, so watch them closely when you toast them and take them off the heat while they are still light in colour.

Storing it

Keep the sealed pack in a cool, dry cupboard out of the sun. Once opened, put the nuts in a jar with a tight lid and use them fairly soon, as the rich oil in them can turn stale. If they smell like old paint or taste bitter, throw them away.
