Flax seeds are tiny, flat and glossy, usually a warm brown, with a mild nutty taste. They are a quiet ingredient: a spoonful adds a little crunch and a toasty flavour to things you already make, without changing them much.

Ways to use it

  • Sprinkle a spoonful over porridge, yoghurt or a bowl of fruit.
  • Stir into bread, muffin or pancake batter for a nutty note and a little texture.
  • Scatter over a salad or stir-fried vegetables just before serving.
  • Soak a spoonful in a few spoonfuls of water for ten minutes or so and it turns thick and gel-like, which is useful in baking and in smoothies.
  • Toast lightly in a dry pan until fragrant, then use as a topping for rice or noodles.

Whole seeds stay hard and do not blend into batters. If you want them mixed into a recipe, grind them in a small grinder or spice mill just before use, as ground seeds taste fresher.

Storing it

Keep the pack sealed in a cool, dry cupboard, away from sunlight and heat. After opening, move the seeds into a closed jar. Ground seeds are best kept in a closed container in the fridge and used within a short time.
